Five on Friday: Taco Round-Up

This week we received an incredible taco dinner in our HelloFresh box! In fact, every time a taco dinner is in the line up I get pretty pumped. So today I thought it would be fun to share my five favorite HF taco recipes that you can EASILY recreate in your own kitchen. Instead of layering the usual seasoned ground beef, lettuce, tomato and cheese, try one of these recipes for your next taco night...

 1 // Rapid Crispy Shrimp Tacos with Crunch Red Cabbage Slaw. This truly took less than 12 minutes to prep, cook and devour (hence, the "rapid" title). I think it's the reason I loved it so much, but also because it was SO DANG GOOD. Everything came already prepped and sliced which I really, really appreciated so I just dumped the ingredients into a bowl and then cooked the shrimp in a few minutes. 2 // Sweet Potato & Black Bean Tacos with Avocado Crema. My favorite meatless taco! And my kids devour this one too! Find the recipe here.
 
3 // Feisty Fiesta Fish Tacos with Grapefruit, Avocado, and Cabbage Slaw. Never ever ever thought to put grapefruit on tacos...until now...and oh my goodness it is amazing. Find the recipe here.
4 // Sesame Beef Tacos with Quick-Pickled Veggies and Spicy Crema. These are some of the most flavorful tacos we have ever had. Find the recipe here.
5 // Crispy Fish Tacos with Lime Carrot Slaw and Sour Cream. Battered and fried fish? YES! Alllll the YES! These were Matt's favorite tacos out of them all! Find the recipe here.

Five on Friday!

Happiest Friday!
one. We've been hanging outside a lot lately on the weekends and I've had a few people ask me how our patio furniture has held up since we bought it last summer! I am happy, happy, happy to report that it has held up beautifully!! I did a ton of research last summer to find affordable furniture that would last and decided to go with this 5 piece rattan wicker set. I love that you can arrange the furniture in a variety of ways depending on your set up and that the cushions have removable and washable covers so I don't have to freak out when my toddlers leave their melted popsicles on my couch!!!! We also cover it with this tarp to protect the cushions from the sun and rain when we aren't using it.
two. A few weeks ago I scooped up some new summer items from my favorite boutique, Petal! One of my most favorite pieces I grabbed was this suuuuuuper cute summer romper and so many of you loved it on my InstaStories! Anyway, I had to follow up to let you all know that it's now available for purchase online!!!

four. Confession: I have the absolute hardest time burning a nice candle. Although I am obsessed with candles I rarely splurge on them and instead quickly burn through inexpensive candles. In fact, I just finished burning my Nest Christmas candle a few days ago because I would only light it when we'd have company over or when my house is really clean or during nice dinners with Matt -- all of which are infrequent occasions. However, one of the tips I've been putting into practice from the Happier podcast is NOT saving nice things for special occasions (perfume, candles, wine, etc.)! And so I've been burning my new favorite Nest candle -- Japanese Black Currant...and it brings me a tremendous amount of happiness.
five. We recently received one of my most favorite boxes of HelloFresh yet! In my opinion, the summer boxes tend to be the best. Last week we enjoyed Pineapple & Chicken Quesadillas one night and saved our Asparagus & Prosciutto Tartines for an at-home date night over the weekend. Five on Friday!

Happy Cinco de Mayo Friday!
one. In honor of Cinco de Mayo I had to share my favorite guacamole recipe!
two. What's that? You say you want another festive recipe? Okay, you got it! Here is my favorite Cinco de Mayo beverage -- Cherry Beergaritas, to go alongside your guac!
three. Is this not the happiest welcome mat? I impulsively picked it up at Target last week and was convinced Matt was going to make me take it back as soon as he arrived home so I ripped off the tags right away! But to my surprise...he loved it!  
four. It's Teacher Appreciation Week at the kiddos' school. Each day is a different theme/gift and yesterday was "treat day." I figured all of our teachers were maxed out on B&BW lotions and candy (although I thought last year's candy gift was cute and clever) and sweets (see previous "Smart Cookie" gift). Anyway, we have some pretty incredible teachers so this year I thought I'd make each of them each dinner! I don't know if this is a weird gift or an awesome gift but if someone gifted me a night off of cooking I'd be pretty pumped. Anyway, I tripled my favorite Baked Spaghetti recipe which yielded 6 meals plus some leftovers for us one night.
five. I realize this was a heavy food post, but I have to share one more recipe I made earlier this week because it is so dang good and it's perfect for Cinco de Mayo tonight -- Sesame Beef Tacos with quick pickled veggies and spicy crema!

Five on Friday!

Surprise -- a post! Things continue to be wild around here but should hopefully settle soon and regular posting will resume. In the meantime, a few (or five) things...

one. Last week McKinsey hosted Supper Club! She made the most incredible Jamaican Pork Tenderloin in the slow cooker and served it alongside roasted cauliflower, green beans and rolls! Two thumbs up!
two. My friend Mel had her baby -- Madison Marie!!!! I've been over a couple times in the past few weeks to sneak in some itty bitty baby snuggles. She sleeps in this little basket all day! JK -- newborn pictures in progress here. But my goodness, I blacked out through both of my kids' newborn days and forgot how sweet and sleepy new babies are!
three. Last week we had another huge eye appointment and y'all (I'm already crying just writing this)...Thomas NAILED IT. Most of the time these appointments, which take around three hours to complete, are pure torture for us all. But Thomas was the biggest champ. He even had to get his eyes dilated twice (the first time wasn't enough) and let Dr. D give the most thorough eye exam while he SAT STILL in the chair BY HIMSELF (sorry I'm screaming with all caps, I'm just so excited and proud). In the past it would take three of us to hold him down and pry his eye lids open for an exam. Because we were able to get such good measurements we are tweaking his contacts with a new prescription. Previously we were working on his long distance vision and now we are going to switch to his reading vision -- and hopefully this will help us with things like STAIRS (our nightmare)!!! Without lenses in his eyes we can only pick one vision -- near-sighted or far-sighted vision to work on at a time, so Thomas will always struggle a bit with whichever vision he isn't working on over the next few years, until he gets a permanent lens implanted in his eye. Anyway, this little dude is SO DAMN AWESOME. I couldn't be more proud of how he's handled this journey with so much strength! Oh, and if you know us in real life, don't be offended if Thomas gives you his confused stink-eye look if you're interacting with him from too far away -- you're blurry!
four. In other exciting Thomas news -- we finally got his summer shoes in! Poor guy had been wearing his sissy's pink natives and pink tennis shoes for a bit while we waited on his new kicks to arrive. He and Caroline now wear the SAME size shoe. I've written about my love for Natives before but these shoes are absolutely our favorite summer shoes -- they are durable, breathable and perfect for errands and trips to the splash pad.
five. Yep, still using HelloFresh, thank goodness. If I didn't have these meals waiting on my doorstep there's a good chance we'd be surviving off of cereal 7 days a week right now. But instead we're only eating cereal 4 days a week and amazing things like pork chops with crispy chorizo Brussels sprouts smothered in balsamic glaze.
