Saltine Cracker Toffee || 4th Annual Cookie Exchange

Last weekend Mel hosted her 4th Annual Cookie Exchange! Over the years this exchange has gotten yummier and yummier as the ladies have become more competitive with their recipes.
More than 17 types of cookies came to the party and each girl baked 4 dozen so Mel's home was filled with more than 816 (!!!!) cookies! 
 The cookie I voted for -- peanut butter fudge!
Mel's famous ho-ho punch: Combine 1 bottle of chilled champagne, 1 bottle of chilled ginger ale, and 2 packages of frozen strawberries, partially thawed.

And at the end of the party each girl took home a huge bucket full of treats.
Last year I made Graham Cracker Toffee for Christmas gifts and it was such a big hit I wanted to make it for Mel's party. However, I decided to tweak the recipe a bit by swapping out graham crackers for saltine crackers, added a delicious layer of peanut butter and topped them with M&Ms and sprinkles! Oh, and there's a splash of toddler love in there too.
 
My cookies came in 4th place which I still consider a pretty solid win considering there were 17 cookies to vote on. Here is the recipe...

Saltine Cracker Toffee

Ingredients
•    2 sleeves saltine (or graham) crackers
•    1 cup packed brown sugar
•    1 cup (2 sticks) butter
•    ½ cup creamy peanut butter
•    2 cups semisweet chocolate chips
•    1 cup chopped crushed M&Ms (or other crushed toppings like Andes mints, candy cane, toasted pecans, sprinkles, etc.) 

Instructions

1.    Preheat oven to 350 degrees F.

2.    Line a 13 x 9" baking sheet with aluminum foil and mist it with baking spray. Tightly arrange saltine crackers in a single layer. You may need to break a few into smaller pieces. Set aside.

3.    In a saucepan, heat the butter until melted.  Add brown sugar and whisk to combine.  Continue cooking until the mixture reaches a boil, stirring constantly.  Let the mixture boil for about 2 minutes.

4.    Remove caramel mixture from heat and pour over crackers. Use a spatula or spoon to spread the mixture evenly over the crackers.  Bake for 7-8 minutes or until the butter mixture is bubbly.

5.    While toffee is baking, heat peanut butter in microwave until melted.

6.    Remove pan and immediately drizzle peanut butter over and sprinkle the chocolate chips evenly on top.  Let sit for a few minutes until the chocolate is melted, then use a spatula to spread the mixture around. Sprinkle crushed M&Ms (or other crushed toppings like Andes mints, candy cane, toasted pecans, sprinkles, etc.)

7.    Let sit for about two hours or chill for 30 minutes. Cut and enjoy! 

Yields approximately 40 cookies

O' Christmas Tree + Family Jammies || 2016

Our home is officially decorated which means we are one step closer to being ready for Christmas! At first I was a little sad that we had to get the smallest tree on the lot this year to fit into our tiny space but I ended up loving this size more! This tree is a lot more full of meaningful ornaments and has a lot less random bulb ornaments. So every time I walk by the tree I'm reminded of the most beautiful memories. So...small tree for the win!

I picked up this Christmas countdown link set in the $1 section at Target around Thanksgiving and Caroline loves ripping a link off each day. This also has helped her learn that Christmas isn't today or tomorrow or this weekend...we still have many links to go!
Another framed Christmas card to add to our mantel! It is so wild to see how much has changed from year to year.
We put a little Christmas decor in Caroline's room too but she can't be trusted at night so we have to remove the tree from her room before she goes to bed.

I also wanted to provide an update on our jammie-jams we ordered earlier this season. First, they arrived from China pretty fast. Second, they are SUPER cute but thinner than I had hoped. Third, the adult jams are weird-fitting. Actually, mine fit okay but Matt's are hilarious -- the top is wide and short and the bottoms fit like yoga pants. So I guess that's what you get for purchasing the HA knock-offs, but I'm still pretty pumped about them.

Five on Friday || Homemade Christmas Gifts {Teachers, Co-Workers, Neighbors, etc.}

I am always looking for new Christmas gift ideas for Thomas and Caroline's teachers. Both kiddos each have 3 teachers (and even additional part time teachers) so gifts add up quickly. With that in mind I usually craft or bake something in large, inexpensive quantities to give out around the holidays. So today I am sharing five of my go-to Christmas gifts I've made in the past for teachers, neighbors, co-workers, etc.
DIY Candy Cane Sleighs: I promise these are WAY less work than they look. Last year I gave Caroline and Thomas's teachers candy cane sleighs with $5 gift cards inside. They were BIG hits all around. You can find my tutorial here.
Homemade Jam: You can never go wrong with homemade jam! If you can carve out a day (or even just a morning) you can knock out dozens of mini jars of jam for Christmas gifts. These are so nice to have on hand for last minute gifts too. You can find my homemade jam tutorial here.
Christmas Ornament: Last year as the "room mom" I had the additional responsibility of providing gifts from the class on a budget. I found super cute ornaments at Target for $1 each then signed all of the babies names on the ornament as a keepsake gift! The teachers absolutely loved this sentimental gift.
Mini Cinnamon Bread Loafs: This is my annual go-to gift for teachers, friends, neighbors and more. First I run to Michaels and stock up on holiday ceramic mini loaf pans for $1 each.You can also use disposable tins too. I found some super cute holiday disposables (here, here & here) and ceramic pans (here, here and here) on Amazon! Depending on how much time I have to prepare the loaves, I'll either use this easy Cinnamon Bread recipe or Cinnamon Crumb Cake Mix. Once they are cool I plastic wrap them and tie a bow on top. Easy, delicious and I can make large batches quickly!

Christmas Stove Top Potpourri: During the holidays you can usually find a pot of Christmas potpourri simmering on my stove top. The smell is so delicious and is definitely a fun gift worth giving. For this gift I've filled little bags or mason jars with fresh cranberries, an orange, cinnamon sticks, cloves and a sprinkle of nutmeg for a festive Christmas potpourri. Tie a bow on top and add a gift tag!
