Ringing in 2018!

We rang in the new year with three of our best friend couples! The night was perfect and I couldn't have imagined kicking off 2018 any other way. As soon as we got the kids down for bed (and blasted their powerful sound machines), we got the party started. Thomas slept soundly through the festivities and Caroline woke up once to tell us to quiet down.
For dinner I served traditional New Year's foods for luck, prosperity, gold, progress and love in 2018!

A breakdown of the meaning behind the foods:

PORK. The tradition of eating pork on New Year's Day is based on the idea that pigs symbolize progress. The animal pushes forward, rooting itself in the ground before moving. This moving forward is seen as a symbol of moving forward in the New Year. 

BLACK EYED PEA SALAD: Legumes including beans, peas, and lentils are also symbolic of good luck. I also incorporated tomatoes as  as a symbol of love!

KALE SALAD: Cooked greens such as cabbage, collards, kale, turnips, etc. symbolize wealth, prosperity and good fortune because their green leaves look like folded money. It's widely believed that the more greens you eat, the more prosperous you will become during the year ahead. I picked up this pre-made salad from Harris Teeter.

CORN BREAD: Corn bread, which symbolizes gold, completes the traditional Southern meal.
Wyn, Lisa and John all have birthdays on and around New Year's Eve so for dessert I had a birthday cake made!
We had various beverage stations stocked with wines, beer, prosecco, etc, but what stole the show was the champagne punch! It was SO (dangerously) good. The jello shots were also a big hit among the entire crowd and were the first to clear out.



Inside the girls were busy popping bubbly, clinking glasses and dancing! Lots and lots of dancing.
 

In preparation for the night Matt built a "man tent" for all of the guys outside. He left one side open and built a fire just outside the tent to give them some warmth in the 27 degree temps.

 -- RECIPES --

Carolina Style Slow Cooker Pulled Pork

Ingredients:
4-6 lb pork shoulder
2 white onions, diced
4 cups of apple cider vinegar
1 tablespoon liquid smoke
1.5 teaspoon crushed red pepper flakes
1 teaspoon cayenne pepper
1/2 tablespoon garlic powder
1 tablespoon paprika
2 tablespoon brown sugar
BBQ sauce {optional}

Directions:
Place onions in the bottom of crock pot. Blend together salt, pepper, red pepper flakes, paprika, garlic powder and sugar; Rub over roast and place in crock pot. In a small bowl combine apple cider, apple juice and liquid smoke. Pour half of the mixture over the roast. Set the timer to cook on low for approximately 8-10 hours. The roast should be ready to fall apart when you stick a fork in it. Remove meat and onions. Discard onions and shred the pork. Pour remaining juice mixture over meat before serving. Serve alone or on a bun.

Black-Eyed Pea Salad
Ingredients
2 cans black-eyed peas, drained and rinsed
1 large tomato, diced
1/2 large red onion, diced
1 large bell pepper, diced
6 green onions, sliced
1/3 cup cilantro, chopped
1/4 cup rice wine vinegar
1/4 cup canola oil
1/2 tsp. organic cane sugar
salt and freshly ground black pepper, to taste

Directions
1. Toss to combine black-eyed peas, tomato, red onion, pepper, jalapeno, and green onion in a large bowl. 2. In a small bowl, dissolve sugar in vinegar. Whisk in oil. Season with salt and pepper. 3. Pour dressing over bean mixture. Toss to coat. Stir in cilantro and season to taste with salt and pepper. Refrigerate until ready to serve (the longer it sits the better the flavor will be).

Corn Bread Mini Muffins

Ingredients
2 Boxes Jiffy Cornbread
2 Eggs
1 Can Creamed Corn
2 Tbsp Sugar

Directions
Preheat the oven to 350 degrees. Mix all ingredients until combined in a medium bowl. Scrape mixture into a mini muffin pan that has been sprayed well with cooking spray. Bake for 20 minutes or until center is just done.

Champagne Punch
In a large pitcher mix together:
1 cup St Germain
3 bottles Champagne
2 cups Vodka
3/4 cup Lemon Juice; fresh
2 cups Pom Juice
Garnish with fresh rosemary sprigs and fresh Pomegranate Seeds. I also used a muffin tin to make  large ice cubes with lemons for the punch.

Champagne Jello Shots

Ingredients:
2 4 oz. boxes of pineapple Jello
1½ cups boiling water
2½ cups champagne
1 cup sliced strawberries
20 2 oz. clear plastic shot glasses

Directions:
Mix your pineapple jello and boiling water in a medium sized bowl, stirring until jello powder has all dissolved. Refrigerate for 15 minutes. Stir in champagne and refrigerate for another 30 minutes or until jello has just slightly thickened.  Set aside about 3/4 cup of your jello and champagne mixture for creating the foam top and put it back in the refrigerator. Pour jello and champagne mixture into your shot glasses, then drop a few sliced berries in each glass. Refrigerate overnight. Before serving, whip {with a high speed hand mixer} your 3/4 cup left over jello until it becomes white and fluffy and resembles foam. Spoon "foam" on top and serve.

Progressive Christmas Dinner Party!

I love our neighborhood SO much. SO much in fact, that I agreed to serve on our HOA board as the social committee co-chair and host the last stop of our neighborhood Christmas progressive dinner party on Sunday night. Trust me, that's a lot of love...
We spent the entire weekend festivizing (I just made that word up) our home for Christmas. Since this is our first Christmas in our new home so we had a LOT of new decorations to purchase! Matt and Caroline spent a full day running back and forth from Walmart and Home Depot buying exterior stuff and hanging everything. Meanwhile, Thomas and I ran all the other party errands and got to work festivizing the inside of our home! As fun and exhausting as it was to get ready, I was glad I had the party deadline to get it all done.
I was especially excited to finally break in our dining room! We just started working on this room about six months ago and it's coming together so beautifully. 
After posting to insta-stories I received a TON of questions asking for sources for things so I'm going to break it down for ya:

Table: I had so much fun blowing everyone's mind with the source for our table -- it's the Pottery Barn Banks Dining Table. Just kidding! It's the most perfect dupe of the PB table...from Home Depot. YES! Home Depot. And I actually purchased it for half that price during an amazing sale. Now I just need my dream chairs to go on sale.

Light Fixture: Duh, it's from Wayfair, just like every other light fixture in our house!

Curtains: The curtains are the real reason I don't have dining room chairs. I fell in love with and splurged on gorgeous Calico Wedgewood fabric by Lacefield Designs and had them custom made. They deserve a post on their own because they are sooooooo unbelievably beautiful and worth every last drop of my decorating budget. Who needs chairs anyway?
Okay, back to the party! I made an early bird trip to Trader Joes to raid the eucalyptus delivery on Friday morning before work. I am not even kidding, I visited TJ's three times last week for eucalyptus and they were sold out by lunch every day. So, bright and early I arrived and practically tackled the poor flower man carrying the boxes outside. I bought 10 bunches of eucalyptus for our banister garland and had two bunches left over so I used it for my tablescape. I simply laid it out in piles (loosely) in between the candles and it turned out so pretty. The gold votives are from Michaels and the tall white candles are from Walmart (thanks, Matt). 
The night was a huge success and we had about 35 neighbors attend the progressive party! The first stop of the party was happy hour and appetizers -- hosted by my friend and social co-chair, Brooke! Her fam lives directly across the street from us so it couldn't have been more convenient for all the party goers.
I brought my favorite Hot Corn Dip appetizer!
The next and final stop was our house for dinner and dessert! A huge kudos to Matt for working hard to pry open every painted shut window to hang those wreaths!
For dinner, neighbors brought over SIX crock pots of chilis! Want to know one of the best benefits of hosting the dinner portion of the event? Leftover chili. For daysssssssss.
I made my favorite Wendy's chili and 50 corn bread muffins for the party too. 
We ended the party with a ton of delicious dessert!

2nd Annual Football Viewing Party

Over the weekend we had a few of our friends over to watch the Ohio State v. Oklahoma game on the big screen and let our kiddos run around. This is actually Matt's party of the year and it's the one he gets most excited preparing for. Last year we kind of blew this shindig out but since planning events weeks in advance is not in the cards these days we decided last minute to invite the usual suspects over for a casual last minute party.
Matt got serious about improving the projector screen this year and doubled it in size using pvc piping for the frame, a large tarp and 3 yards of white fabric (instead of our king bed sheets -- hallelujah). Our mini projector has been one of our best and most fun purchases.

As always, the kids bounced the night away in the bounce house.

The game may not have ended well but the party was a success!
