Five on Friday!

Happy Friday! This week has been crazy at work and I am so looking forward to our fun weekend ahead. Let's get right down to it...

- ONE - I just squeezed out the very last drop of my Naked foundation and was so happy to see that Ulta is running a one day sale TOMORROW on Philosophy Foundations {Hope in a Jar, Miracle Worker or Supernatural Foundation} for $25! I don't think this sale is going to be advertised anywhere online or in-store because I asked about it earlier this week when I dropped in to Ulta for a return and no one seemed to believe me that a sale this good would actually run this weekend. You better believe I'm bringing this flier in with me. Also, I've never splurged on Philosophy foundation but use the face wash, scrub, Hope in a Jar and Hands of Hope. Has anyone tried the foundation? Would love to hear your review.
- TWO - At the urgent request of my sister, I made Skinny Crockpot Thai Chicken this week for dinner. It lived up to her hype -- super easy and delicious. You can find the recipe {here}!
- THREE - In other cooking news, I just started making Caroline's baby food. I always thought I'd make every single thing she eats. Well, she turned 8 months this week and I am just now getting around to blending up some peas, carrots, apples, blueberries and sweet potatoes. I didn't really know what I was doing so I followed Hello Scout's tutorial {here} and was happy with how the food turned out. And after 3 hours of baby food making...Caroline will only take her pouches still unless I mix a ton of oatmeal into the food. Hopefully this experiment pans out...
- FOUR - Did y'all see that C. Wonder is closing all of it's stores?! You can read about the news {here}. I was absolutely shocked. But the good news is...everything is now 50% off on the website! A few things I wish I were purchasing...

Queen City Restaurant Favorites

I often receive emails from readers who are planning a trip to Charlotte, aka the "Queen City," and are looking for recommendations on where to dine. I absolutely love this city and all that it has to offer and could probably turn this into a series of posts, but instead I will try and stick to a few restaurant highlights. Charlotte pretty much offers everything from good ole' southern comfort food to high end french fare (and everything in between). You can even find some of the very best meals from various food trucks around town. 
 
If you ask any other Charlotteon what their favorite restaurants are they may even give you a completely different list. These are just some of my tried and true favorites in town -- the places I blurt out before Matt even finishes asking "where do you want to eat?" and the spots I always make sure to introduce my visitors to when they are in town.
 
Bad Daddy's Burger Bar ($): I had to start off with this one because I just love the giant build-your-own salad topped with a turkey burger from Bad Daddy's so much. In fact, just 3 days after Caroline was born this was the first place we left the house for. I've never had a better burger in Charlotte at a comparable price. And others must agree because this kid-friendly neighborhood restaurant has expanded to multiple locations around Charlotte and even has a location inside the airport now. The customizable options are endless, the fries are perfection (award-winning, actually) and the price is cheap!
 
Zada Janes ($$): There are tons of great breakfast/brunch options around town, but Zada Janes is personally my absolute favorite. Tucked in the heart of Plaza Midwood, a hipster neighborhood, Zada Janes consistently wins awards each year for their delicious organic, local foods served in a funky, laid back atmosphere. I always order the Booker T.'s East Side Hasher and have even attempted to recreate it {post here} in my own kitchen. If you're planning to grab breakfast here on the weekend, get there early or be prepared to wait a bit (they don't take reservations). The staff and patrons don't take "laid-back" lightly, so you may find yourself playing several rounds of shuffle board or corn hole before your table is ready.  

Cabo Fish Taco ($$): Located in NoDa (Charlotte's colorful artsy district), Cabo Fish Taco is famous for well, their fish tacos! Anytime we have guests staying with us we make sure to squeeze in a round of fish tacos with them. From the moment you are seated you receive bottomless chips and corn based salsa which is the very best way to start off any amazing dining experience. From there, you must try their fresh margaritas or local beers before making the very hard decision of which tacos (or wrap/burrito) to order. And a small tip - you can mix and match your taco choices if you're having a hard time deciding between flavors! No matter what you order, you are guaranteed a generous portion of the freshest and most flavorful fish and delicious side item all for around ten bucks, a seriously good deal. And if my recommendation isn't enough to sell you, Guy Fieri from Diners, Drives and Dives also loves this place.  

Cowfish ($$$): One of Charlotte's most popular restaurants (and for good reason), Cowfish is hands down one of my favorite places to grab a delicious food combination in a unique atmosphere. The menu is so big that it can be a bit intimidating for first timers, but there is something for everyone from sushi to burgers (or burgushi - a combination of both). You can't order wrong here. Everything is delicious, including the cocktails and desserts. Personally, my favorite things to order are the Crab Rangoon Dip or Seared Sesame Tuna for an appetizer, the Bento Box (a sample box that includes the burger of the day, a specialty sushi roll, sweet potato fries, edamame & marinated cucumbers) for dinner and The Moose is Loose or Fresh Berry Tall Cake for dessert! Notorious for it's very long wait (usually 45+ minutes), try to arrive early for dinner or grab a late lunch if you're short on time. But I promise you, it is so worth the wait! Also, this is a great place to celebrate birthdays (we celebrate mine here every year) and you get a free dessert and birthday song at the conclusion of your meal.

The Fig Tree ($$$$): If you're celebrating a special occasion or are looking for an upscale dinner, The Fig Tree is the place to dine. Charlotte is packed full of fine dining yet we find ourselves coming back to The Fig Tree for all of our celebrations because it's just that good. The service is always spot on, you have several seating options (inside the Lucas House, on the charming porch or down a few steps to the front yard patio) and the food is excellent.

Cajun Queen ($$$): Located in Elizabeth and is a great place for live jazz music in the evenings and great Cajun food. Cajun Queen does take reservations and I recommend asking for the upstairs seating when you call so you can be close to the live music. They also have a great Sunday brunch. 
 
Good Food on Montford ($$$): The name really says it all -- this is seriously GOOD FOOD and has become my latest and greatest obsession for date night. This tapas restaurant serves simply perfect plates in a warm and cozy atmosphere. The restaurant is small and the tables are limited so make sure to get there early and do not, I repeat, do NOT leave without trying the steamed bun.
 
Dogwood Southern Table ($$$): This restaurant is currently my favorite in Charlotte. The atmosphere, the food and the cocktails are some of the best around. Make sure to start off with the pimento cheese dip appetizer!
 
The restaurants above are my all-time favorites but here are a few other great options we frequent (some more than others) that are worth mentioning based off of food type or location.
 
Italian: Mama Ricotta's ($$$) or Vapiano ($) 
BBQ: Mac's Speedshop ($) or Midwood Smokehouse ($)
Mexican: Pacos Tacos & Tequila ($$) or Vida Cantina ($$) 
Sushi: Room 112 ($$$), Nikko ($$) or Soul Gastrolounge ($$)
Pizza: Mezzanote Brick Oven Pizzaria ($$), Pizza Peel ($$) or Revolution Pizza & Ale House ($$) 
Uptown Dining: Dandelion Market ($$), Fahrenheit ($$$), Vida Cantina ($$), Vapiano ($), Room 112 ($$$)
Other: 131 Main ($$), Tupelo Honey Cafe ($$$) or Leroy Fox ($$)

Ringing in 2015 {Five on Friday}!

Happy New Year! 
To be completely honest, we rang in the new year asleep in bed by 10 pm. And I kind of liked it. No crowds, no expensive covers, no taxis and no hangover. However, we did have some of our best friends over on New Year's Day to really kick off the year right -- friends, fire, food, football (and bubbly)! It doesn't get better than that!
It was a beautiful sunny and chilly day in Charlotte so we broke out our new fire pit (and fire pit fishing poles) and roasted some s'mores. 
Our menu for New Year's Day consisted of the traditional southern meal designed to bring a year of good health, good luck, good fortune and love. For as long as I can remember my mom has cooked up this tasty meal and this year we decided to carry on the tradition. After all, we're pretty dang excited to start a fresh new year! Here are the five foods that made up our tasty New Years day meal:
1. PORK. I slow cooked a pork shoulder for lunch but you can also use ham, tenderloin, etc. The tradition of eating pork on New Year's Day is based on the idea that pigs symbolize progress. The animal pushes forward, rooting itself in the ground before moving. This moving forward is seen as a symbol of moving forward in the New Year. 

Carolina Style Slow Cooker Pulled Pork

Ingredients:
4-6 lb pork shoulder
2 white onions, diced
2 cups of apple cider vinegar
2 cups of apple juice
1 tablespoon liquid smoke
1.5 teaspoon crushed red pepper flakes
1 teaspoon cayenne pepper
1/2 tablespoon garlic powder
1 tablespoon paprika
2 tablespoon brown sugar
BBQ sauce {optional}

Directions:
Place onions in the bottom of crock pot. Blend together salt, pepper, red pepper flakes, paprika, garlic powder and sugar; Rub over roast and place in crock pot. In a small bowl combine apple cider, apple juice and liquid smoke. Pour half of the mixture over the roast. Set the timer to cook on low for approximately 8-10 hours. The roast should be ready to fall apart when you stick a fork in it. Remove meat and onions. Discard onions and shred the pork. Pour remaining juice mixture over meat before serving. Serve alone or on a bun.
 
2. COOKED GREENS. Cooked greens such as cabbage, collards, kale, turnips, etc. symbolize wealth, prosperity and good fortune because their green leaves look like folded money. It's widely believed that the more greens you eat, the more prosperous you will become during the year ahead. Laura brought over the tastiest turnips for our meal. I'd never had turnips before but they were delicious!

3. BLACK EYE PEAS. Legumes including beans, peas, and lentils are also symbolic of good luck. Their small, seedlike appearance resembles coins that swell when cooked so they are consumed with financial rewards in mind. After the Civil War, hungry Union soldiers ate up Southern crops, but they left behind black-eyed peas, which they considered livestock feed; the Southerners fortunately discovered the black-eyed peas and the legume was thereafter considered lucky. Today, some southerners believe in eating one pea for every day in the new year.

Southern Style Black Eyed Peas with Bacon

Ingredients:
1 pound dried black-eyed peas, rinsed and sorted
1/2 pound bacon, cooked and crumbled
1 tablespoon butter
1 large onion, chopped
1 garlic clove, minced
1/2 teaspoon dried thyme
Salt to taste
Additional cooked and crumbled bacon, optional

Directions:
1. Place peas and bacon in a large Dutch oven; add water to cover. Bring to a boil; boil for 2 minutes. Remove from the heat; let soak, covered, for 1 hour. Do not drain.
2. In a skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in thyme and salt.
3. Add to pea mixture; return to the heat. Cook, covered, over medium heat for 30 minutes or until peas are tender, stirring occasionally. If desired, top with additional crumbled bacon.

4. CORN BREAD. Corn bread, which symbolizes gold, completes the traditional Southern meal. Also, baking your corn bread in a round skillet is believed to bring a continuous circle of prosperity. I kept this part simple and baked up lots of mini muffins using a box of Jiffy corn muffin mix.

5. TOMATOES. I recently read A Healthy Slice of Life's post {here} on how she incorporates tomatoes as part of her New Year's Day meal as a symbol of love! I thought this was such an awesome addition that I decided to incorporate her tradition in our home too! I roasted ours in olive oil and lots of garlic.

Garlic Roasted Cherry Tomatoes

Ingredients:
2 (10 oz) containers cherry tomatoes, halved
6 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon kosher salt
2 teaspoon fresh cracked black pepper

Directions:
Preheat oven to 375°F. In a medium bowl, toss together tomatoes, garlic, olive oil, salt and pepper. Transfer to a baking sheet and spread into an even layer. Bake for 20-25 minutes, or until tomatoes are soft.
 
And that's how we spent our first day of the new year!
