Ever since we hosted a crock pot party in my kitchen I have been wanting to upgrade our crock pot. The pot I own is suuuuuuper old and after seeing all of the features of the 5 much newer crock pots I realized I've been missing out! Tell me about your crock pot. Do you love it? Should I put it on my Christmas list?

Slow Cooker Chicken Tortilla Soup
Adapted from Baked by Rachel
Ingredients
1.5 lbs chicken breast
1.5 lbs chicken breast
15 oz can sweet whole corn kernels, drained
15 oz can diced tomatoes, drained
15 oz can diced tomatoes, drained
4 cups chicken stock
1 cup onion, diced
1 cup green bell pepper, diced
3 cloves garlic, minced
1/2 tsp chili powder
1/2 tsp chili powder
1 1/2 tsp salt
1 tsp ground pepper
Monterey Jack cheese, shredded
Avocado, diced
Tortilla strips
Directions:
1. In your slow cooker, add first 8 ingredients. Sprinkle with salt and pepper. Cook on high for 4 hours or low for 8 hours.
2. Prior to serving, remove chicken breasts and shred (by hand or stand mixer). Return shredded seasoned chicken to slow cooker bowl. Stir gently.
3. Serve with a generous helping of shredded cheese, avocado and seasoned tortilla strips.

ReplyDeleteI really really realllllllly highly recommend if you're going to upgrade your crock pot anyway that you jump to an instant pot. I got my first over black Friday and i haven't looked back at either of my 2 crock pots since! It's AMAZING, no joke. So so so good! It's like a crock pot on steroids!
ReplyDeleteI have a Hamilton Beach slow cooker and I love it. I used to have a slow cooker that was the Crock Pot brand, but I feel like it overcooked things. I've never had that problem with my current slow cooker. And it has a temperature probe feature that causes the slow cooker to stop cooking the food as soon as the meat is fully cooked and it switches over to a warm setting.

What makes the broth look creamy? Did I miss an ingredient? This looks so tasty - can't wait to try it!
ReplyDeleteThe color is a mix of the diced tomatoes and chicken stock! It’s not creamy but the color makes it kind of look like it is!
